Happy New Year, everyone!! I still can’t believe it’s 2023, and I can’t get the hang of writing 2023 on my checks! There is so much that will be going on for us in 2023! We are currently preparing for our 4th Anniversary Grand Opening, which will include not only the anniversary celebration but a new office location AND a business rebranding of a division of Bookkeeping Towne, LLC! A lot of exciting things are happening. With all of this excitement of preparing for our grand opening, I knew exactly who I wanted to cater my event…….the one & only Anat Sagi of The Mosaic Table! If you haven’t tasted her delicious food, you are missing out! I met Anat at Hope & Main at one of their vendor events, and I absolutely fell in love with all of the flavors I tasted at her vendor table.

A few months later, I ordered a Shabbat Dinner from Anat and O.M.G…….it was the best “take out” dinner I have ever had! Yes, it was a prepared meal to take home, BUT the instructions were so clear, and heating it at home didn’t matter because I felt like I was eating at a really fancy restaurant. The extra details, the recommendations & the pairings were excellent. I could tell she was so passionate about making my meal experience extra memorable. Being treated like royalty for those few hours at dinner felt nice.

Now, I’m getting hungry…..without further ado, I would like to introduce you all to a dear friend & client who is the Private Chef & Event Planner of Mosaic Table, Anat Sagi. She shares her passion for cooking Mediterranean and Middle Eastern Inspired Cuisines. She strives to support our community and economy by sourcing locally farmed ingredients and creating food traceability for her guests and clients. She can help you with your home dinner parties, bespoke occasions, and pop-ups, and she has these really cool events called Dinner with Neighbors.

Let’s get started with the interview:

Why did you pick this trade in particular?

I chose to be in the hospitality industry as much as it chose me.

I was very young when I had the opportunity to work in my family’s restaurant. There, I fell in love with service & hospitality and began to learn the art of creating memorable experiences for my guests. 

Additionally, my family’s cooking & recipes were the bonds that brought us together during family gatherings, holidays, and special occasions. The flavors were harmoniously unique; the recipes passed through generations. Being a part of that upbringing and having it in my DNA is how hospitality and cooking became my love languages.

How much time do you devote to professional development/learning each week or month?

I take classes as often as possible. I am working a lot, so zoom classes are a superb way to gain information.  In addition, though it may not be formal education, I learn so much by keeping myself present and connecting with the entrepreneurs around me. Listening, asking questions and offering knowledge when appropriate are the some of the best ways to grow in any business.

Not every one of our ideas succeeds…..have you had any idea that has failed? If yes, what did you do to pick yourself back up?

I started my business during Covid, a time of great uncertainty. Due to circumstances, I was mostly cooking packaged prepared meals. The vision for Mosaic Table was to be a Private Chef to cater dinner parties and small events. 

With the many phases of Covid came lots of ups and downs. It was challenging to plan, and I couldn’t really count on what was working today to continue to be relevant in the next season, which was terrifying. There were definitely times when I thought I should close up shop, and even though I have been in the industry most of my life and have a lot of knowledge, Covid was utterly unprecedented, leaving us with not much to rely on.

The “solution”: The silver lining was that I had some key professional humans I could count on to discuss my ups and downs.  I wanted to ensure I saw all the sides before throwing the towel in.  I decided to create a plan B for myself, that would allow me to earn a living if my business was no longer viable. By doing that, I released myself from unnecessary stress and to be more confident in the decisions I was making for my business. 

Entering year three, I am proud to see where Mosaic Table is headed. I am a Private Chef that can offer my guests everything from catering for bespoke gatherings, to pop-up events, I now work together with my clients, taking their vision and creating that memorable experience for them. 

What is your dream vacation?

My dream vacation/s is traveling to different parts of the world and relaxing with the community who live there.  I want to spend time learning about their culture, foods, and passions. Next on my list (in no particular order) are Portugal, Spain, Argentina, and Budapest, and I’d go back to France & Italy any time 🙂
